If this was a birthday, I’d be over the hill. If I was Noah, I’d be out of the ark.
Instead, I’m cruising along the path to Whole 90!
Happy Valentines Day, by the way. Since today is all about love, here is a beautiful thought about loving oneself.
“Something inside you emerges….an innate, indwelling peace, stillness, aliveness. It is the unconditioned, who you are in your essence. It is what you had been looking for in the love object. It is yourself.”
– Eckhart Tolle
I am on a journey to my center and embracing a process of discovery along the way.

This is a great recipe. Rob had no idea it was cauliflower and he had seconds. This was my first time using coconut amino and hey are delicious.
Also made a valentine treat using a recipe I has seen online which I adapted to the W 30.
Coconut Almond Biscuit with Raspberry Lemon Almond Coconut Cream
Yes! They are absolutely light and delicious and heart-shaped.
I strongly recommend trying these.
Here is my recipe:
Crust
2 eggs
1/4 cup coconut oil
Salt (don’t think I added it and it was fine)
1/4 cup coconut flour
3/4 cup unsweetened coconut flakes
1 tbl almond butter
Cream
Coconut cream (Refrigerate the can of coconut milk and open it when you’re ready; add solid part to bowl and then whip in a bowl with a whisk attachment. Whip until the consistency becomes like cool whip. I flavored with a dab of vanilla, lemon extract, and raspberries.
Its pretty! And delicious.
Hey Jenn…how long do I bake the biscuits? Can’t wait to try this recipe!
Thanks! Kristin
