Day 17

Sunday, January 22

Today was Pearl’s first dance performance. She did a great job getting up on stage and dancing with her class. Here she is with a big smile!

Lots of cooking today, with more still to come later. Here is my nutrition update:

Breakfast: Hash of 1 turnip chopped, 1/2 onion chopped, and 3 bilinski’s chicken sausages topped with 2 eggs.

Like I said, Sunday cooking today. I did two of Everyday Paleo’s Easy and Amazing Roast Chickens. I used the Smart Chicken brand and some new San Francisco Bay Sea Salt I purchased.

I also made some brussel sprout chips from Nom Nom Paleo and some kale chips.

Next it was time for another recipe that I’d found earlier this week and wanted to make for some leftovers. Easy Paleo Sweet Potato Delight is a keeper! What’s great about it is that I eliminated the maple syrup and vanilla to be W30 compliant and this was still absolutely amazing. I’m not sure how sweet potatoes end up tasting like pumpkin custard but, take my word for it, this is delicious. Or, better yet, don’t take my word for it, try it yourself.

Meanwhile, the family continues to be fair weather W30-ers. More about that later. However, make-your-own pizzas is always fun for the kids, especially when you have Pearl to help you with the dough (made from scratch to avoid box preservatives).

And one more new one! Paleo for Foodies Fried Green Tomatoes (which I made with red tomatoes). Great recipe. Just had 2 tomatoes so the recipe made too much of everything; I’d half it next time if I only had 2 tomatoes.  These are really good for those who enjoy italian tastes. I also used Old Bay Seasoning in mine and like those flavors too.

I had guests for lunch which was very enjoyable. My friend brought Paleo Butternut Squash soup so we added that to the meal and had a lovely lunch of soup, chicken, sweet potato delight, kale/brussel spout chips, and a fried red tomato.

This afternoon we visited with some more friends which was also wonderful. I enjoyed some fresh veggies, a few plain shrimp, and some asparagus drizzled with olive oil as a snack. I enjoyed sharing the news of the last 17 days with the crowd.

Dinner: Best part of weekend cooking: Leftovers! Fresh spinach salad, 2 meatloaf muffins from Friday, 1 tomato, and some sweet potato delight.

And, last but not least, I poured the cream from my coconut milk from lunch into a bowl and stuck it in the fridge. I’m going to have some tonight and some tomorrow. Who needs ice cream?
