Thai Coconut Soup with Coconut Curry Meatballs

Thanks to Paleo for Foodies for this fantastic W30 recipe.

This was pretty easy to make. I used my Cuisinart food processor to mix the meatballs and used 2 pounds of extra lean ground chicken. I upped some of the ingredients to be sure I had a bit more broth since I had more chicken.

I ate this soup for dinner, shared it with a friend, and still had some leftovers.

Non W30 Man liked it too (or at least he ate it).
